Min duration 1 h
Cost Low
Environment Indoor

Cook and jar seasonal fruit preserves together, experimenting with flavor combinations, pectin levels, and sweetness balance until you achieve the perfect set and a pantry full of homemade preserves.

The Essentials

  • Use slightly underripe fruit alongside ripe fruit, underripe fruit has more natural pectin for a good set
  • Sterilize jars and lids in boiling water or an oven before filling, any bacteria left behind can spoil the batch
  • Test for set with the cold plate method, drop a spoonful on a chilled plate and see if it wrinkles when pushed
  • Skim the foam off the top while the jam simmers, it can cloud the finished color if left in
  • Fill jars while both the jam and jars are still hot, this helps create a proper seal as everything cools
  • Label each jar with the fruit and the date, jams look similar once cooled and are easy to mix up in the pantry
